Almost Vegan
Eat, Drink and Be Vegan is one of my favorite cookbooks. I am not vegan.

Vegan baked goods are my favorite sweet treats. I am not vegan.
Babycakes NYC is my favorite bakery in NYC. I am not vegan. (However, I am a big dork.
)
So why do I love all of these vegan treats? Generally speaking, I feel like they are healthier than non-vegan ones. They typically contain less fat and more fiber. Therefore, I try to stick with almost vegan recipes when it comes to baking.

This weekend the Husband requested M&M cookies so I adapted a recipe from The Joy of Vegan Baking.

Ingredients
- 3 T Flax Meal
- 9 T Water
- 1/2 cup of unsweetened applesauce
- 1/2 cup of vegan butter
- 3/4 cup of brown sugar
- 3/4 cup of granulated sugar
- 2 t vanilla
- 1 1/4 cup of all purpose flour
- 1 cup of whole wheat flour
- 1 t baking soda
- 1 t sea salt
- Dark Chocolate M&M’s approx. 1 3/4 cups

Directions
- Preheat oven to 350 degrees.
- Line cookie sheet with parchment paper.
- In a large bowl mix together the wet ingredients (minus the flax and water).
- In a separate bowl mix together the flax and water to form “flax egg”. Add flax egg to wet ingredients.
- In a separate bowl mix dry ingredients (minus the m&m’s).
- Gradually add the dry ingredients to the wet ingredients.
- Stir in M&M’s.
- Place on cookie sheets.
- Bake for 12 minutes or until lightly browned.

The sea salt caused these cookies to be that ever perfect combination of salty and sweet.
Despite the fact that the Husband requested these cookies to be made with butter and eggs, he still loves them. He did however, comment that they tasted a little healthy. I’d say they were a success!
Do you try to reduce the calories or up the nutrient content of your sweet treats? Or, do you prefer to go all out (cause a treat is a treat)?
I have a sweet treat every single day, so that means making them as healthy as possible except when I visit the Cupcake Stop truck.

Those sound really really good. I’ve tried many many times to make my boyfriend “healthy” cookies that he’ll like, but every time he pushes them away saying they’re “too healthy tasting”.
I;m going to give yours a shot! Or maybe I should just buy Eat Drink and Be Vegan and search for recipes in there!

Mmm, these look great! I do like to make my sweet treats a little healthier, if possible. I usually always have a healthier form of margarine/peanut butter, and sugar, so it usually happens automatically.
I want to get a cupcake from that truck! How fun.
LOVE the M & M cookies! I have ED & BV but not the Joy of Vegan baking. Because I am gluten free, most of those recipes in baking type cookbooks sadly call for wheat or all purp flour. Which I cant do. I raw unbaking you can use nut based flours like almond, cashew, or even oat. But for cookies they dont turn out as well. Sigh. But…I love these anyway and may try them with almond flour and see what happens! What’s your fave one or two ED & BV recipes? I confess I dont use that book as much as I could/should
